The thermal effect of microwaves on bacteria is to denature proteins, causing bacteria to lose their nutritional, reproductive, and survival conditions and die; The biological effect is that the microwave electric field changes the potential distribution of the cell membrane cross-section, affecting the concentration of electrons and ions around the cell, thereby altering the permeability of the cell membrane. As a result, bacteria are malnourished, unable to metabolize normally, their structural functions are disrupted, and their growth and development are inhibited, leading to death. In addition, nucleic acid (RNA) and deoxyribonucleic acid (DNA), which determine the normal growth and stable genetic reproduction of bacteria, are coiled macromolecules tightly connected by several hydrogen bonds. A sufficiently strong microwave field can cause hydrogen bond relaxation, breakage, and recombination, thereby inducing genetic mutations, chromosomal aberrations, or even breakage.
The microwave sterilization temperature only needs 65-85 degrees, and the sterilization time is 5-10 minutes. The entire process does not damage the nutritional content of the material, and is widely used for sterilization of drugs, traditional Chinese medicine pills, traditional Chinese medicine powder seasonings, vacuum packaged foods, seasoning sauces, etc. It can also be used for pre-treatment of insecticidal eggs in agricultural products.
What are the requirements for sterilization of microwave tape packaging?
For microwave sterilization of packaged food, the packaging material should be considered first, and products packaged in metal aluminum foil cannot be subjected to microwave sterilization; If plastic packaging is used, it is required that the plastic packaging has certain temperature and pressure resistance properties, such as cooking bags. If polyethylene plastic bags are used alone for packaging, microwave sterilization is not suitable; Food with high solid content packaged in glass bottles can also be used for microwave sterilization.
